Turkey on the brain...ok pie

I have a serious pie addiction.
After going to Just desserts in Alton Illinois with a few friends (whoever lives in this area..you must go) I was hooked.
We ordered three slices of pie.
1. peaches and cream. which was oh so amazing. baked fluffy cream cheese on top and perfectly tart peaches. It was like eating a little piece of heaven
2. caramel-apple pecan pie. this was the one I ordered. I am sure we all looked crazy at this table, because after we took the first bites of pie we couldn't stop "mmm-ing" and "oh my goddd-ing". You would have thought we were having a moment.
3. Mrs. Ledbetter's chocolate pie. This one was a suprise for me. I didnt think I was going to like it. Oh boy was I wrong. Honestly, I cant even describe how perfect this pie is. You will have to find out for yourself. Check out below to get your endorphin fix.

MRS. LEDBETTER’S CHOCOLATE PIE

1 – 4oz. Bar German Sweet Baking Chocolate
¼ cup margarine
2 large eggs
1 ½ cups sugar
3 T cornstarch
½ tsp. salt
1 12oz. Can evaporated milk
1 tsp. vanilla
1 10oz unbaked deep dish pie crust
Sprinkle of coconut and pecans
Heat oven to 350 degrees. Microwave chocolate and margarine one
minute until melted. Blend together. In medium bowl, beat eggs. Add
sugar, cornstarch, and salt. Beat until smooth. Blend into chocolate
mixture. Gradually add milk and vanilla. Pour into unbaked pie shell.
Sprinkle with coconut and pecans. Bake 50-60 minutes. Check center with
knife – should be thick.

If you are going to make a pie this holiday season, I strongly recommend you to make this one. Or just go and get one..or two.
